Honey Garlic Glazed Salmon with Asparagus

Ingredients
  

4 salmon fillets (about 6 ounces each)

1 bunch of asparagus (approx. 1 pound), trimmed

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons freshly squeezed lime juice

3 cloves garlic, minced

1 teaspoon fresh ginger, minced

2 tablespoons olive oil

Salt and pepper, to taste

Sesame seeds, for garnish (optional)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Prepare the Marinade: In a small bowl, combine the honey, soy sauce, lime juice, minced garlic, and ginger. Whisk together until well blended.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour half of the marinade over the salmon, ensuring each fillet is well coated. Reserve the other half of the marinade for later. Let the salmon marinate in the refrigerator for at least 30 minutes, up to 2 hours for deeper flavor.

      Prepare the Asparagus: Preheat your oven to 400°F (200°C). While the salmon is marinating, place the trimmed asparagus on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Toss to coat.

        Roast the Asparagus: Roast the asparagus in the preheated oven for about 10-12 minutes, until tender and slightly crisp. Remove from the oven and set aside.

          Cook the Salmon: In a large skillet over medium heat, add a little olive oil if needed (especially if your pan isn’t non-stick). Remove the salmon from the marinade and place it skin-side down in the skillet. Cook for about 4-5 minutes, then carefully flip the fillets and cook for an additional 3-4 minutes or until cooked through and flakes easily with a fork.

            Glaze the Salmon: After flipping the salmon, pour the reserved marinade into the skillet. Let it simmer for a couple of minutes to thicken slightly, spooning it over the salmon as it cooks.

              Serve: Plate the salmon fillets alongside the roasted asparagus. Drizzle any remaining glaze from the skillet over the salmon. Garnish with sesame seeds and fresh cilantro or parsley if desired.
