1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

1/4 cup vegetable oil

2 large eggs

1/4 cup honey

1/2 cup unsalted butter (1 stick), melted

Additional honey for drizzling (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease the cups with cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until thoroughly combined.

      Combine Wet Ingredients: In another bowl, whisk together buttermilk, vegetable oil, eggs, and honey until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix; a few lumps are okay.

          Add Melted Butter: Fold in the melted butter until evenly incorporated into the batter.

            Fill Muffin Tins: Using a 1/4 cup measuring cup, fill each muffin cup about 2/3 full with the batter.

              Bake: Place the muffin tray in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean and the muffins are golden brown on top.

                Prepare Honey Butter Glaze: While the muffins are baking, whip together the remaining melted butter and a few tablespoons of honey in a small bowl until well combined. This will be the glaze.
