Ingredients

For the Meatloaf:

1 ½ pounds ground beef (80/20 blend for flavor)

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup milk

1/2 cup grated onion

2 cloves garlic, minced

1 large egg

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

½ teaspoon salt

½ teaspoon black pepper

1 cup ketchup (plus more for topping)

1 tablespoon brown sugar (for sweetening the topping)

For the Mashed Potatoes:

2 pounds Yukon Gold potatoes (peeled and quartered)

1/2 cup milk (warmed)

1/4 cup unsalted butter (plus more for serving)

1/2 teaspoon garlic powder

1 teaspoon salt (adjust to taste)

Fresh chives or parsley for garnish (optional)

Instructions

Prepare the Meatloaf:

    - Preheat your oven to 350°F (175°C).

      - In a large bowl, combine the ground beef, breadcrumbs, milk, grated onion, minced garlic, egg, Worcestershire sauce, thyme, salt, and black pepper. Use your hands or a sturdy spoon to mix until just combined; avoid overmixing to keep the meatloaf tender.

        - Transfer the meat mixture into a loaf pan or shape it into a loaf on a lined baking sheet.

          Top the Meatloaf:

            - In a small bowl, mix together the ketchup and brown sugar. Spread a generous layer of this mixture over the top of the meatloaf to create a sweet and tangy glaze.

              Bake:

                - Bake the meatloaf in the preheated oven for about 60-70 minutes, or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.

                  Prepare the Mashed Potatoes:

                    - While the meatloaf is baking, boil the peeled and quartered potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.

                      - Drain the potatoes and return them to the pot. Add the warmed milk, butter, garlic powder, and salt. Mash until smooth and creamy. Adjust seasoning as needed.

                        Serve:

                          - Slice the meatloaf and serve it alongside a generous scoop of creamy mashed potatoes. Drizzle with additional ketchup if desired, and garnish with fresh chives or parsley for a pop of color.
