For the Meatloaf:

1 1/2 pounds ground beef (80% lean)

1 cup breadcrumbs (seasoned or plain)

1 large onion, finely chopped

2 cloves garlic, minced

1/2 cup milk

1 large egg

2 tablespoons Worcestershire sauce

2 tablespoons ketchup (plus extra for topping)

1 tablespoon Dijon mustard

1 teaspoon dried thyme

Salt and black pepper, to taste

For the Mashed Potato Topping:

4 medium russet potatoes, peeled and chopped

1/2 cup butter (1 stick)

1/2 cup milk (adjust for desired creaminess)

Salt and pepper, to taste

1/2 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, milk, egg, Worcestershire sauce, ketchup, Dijon mustard, thyme, salt, and pepper. Mix until well combined while being careful not to overmix.

      Shape the Meatloaf: Transfer the meat mixture to a loaf pan or shape it into a loaf shape on a lined baking sheet. Spread a thin layer of ketchup over the top for added flavor and moisture.

        Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C). Remove from the oven and let it rest for about 10 minutes.

          Prepare the Mashed Potatoes: While the meatloaf is baking, bring a pot of salted water to a boil. Add the chopped potatoes and cook until fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

            Mash the Potatoes: Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. If using, fold in the shredded cheddar cheese for an extra rich flavor.

              Top the Meatloaf: Once the meatloaf has rested, carefully spread the mashed potatoes over the top of the meatloaf, smoothing them out to cover completely.

                Final Bake: Return the meatloaf to the oven and bake for an additional 15-20 minutes, until the mashed potato topping is golden brown and slightly crispy.

                  Garnish and Serve: Remove from the oven, let it cool slightly, then garnish with chopped parsley. Slice and serve warm with your choice of veggies or salad.
