4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1 bell pepper (any color), diced

1 small zucchini, diced

1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, finely chopped

1 cup spinach, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Salsa and sour cream (for serving)

Instructions
 

Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped red onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Add Remaining Veggies: Stir in the diced bell pepper, zucchini, corn, and chopped spinach. Sprinkle in the cumin, smoked paprika, salt, and pepper. Cook for another 5-7 minutes until the veggies are tender. Remove from heat and allow to cool slightly.

      Assemble Quesadillas: Place a tortilla in the skillet or on a flat surface. Layer half of the tortilla with a generous portion of the veggie mixture. Top with a mix of mozzarella and cheddar cheese, then fold the tortilla in half.

        Cook Quesadilla: In the same skillet (you can add a bit more olive oil if needed), cook the folded quesadilla over medium heat for 3-4 minutes on each side or until golden brown and crispy. Repeat the process with the remaining tortillas and filling.

          Cut and Serve: Once cooked, transfer the quesadillas to a cutting board and let them rest for a minute. Cut into wedges and serve warm with salsa and sour cream.
