2 medium zucchinis, grated

1 cup rolled oats

1/2 cup almond flour

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1 tsp pure vanilla extract

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp sea salt

1/2 cup dark chocolate chips (optional)

1 cup mixed greens (spinach, arugula, etc.)

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled (optional)

2 tbsp balsamic vinaigrette

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare Zucchini: Grate the zucchinis using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or cheesecloth. This step is crucial for preventing soggy cookies.

      Mix Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, baking soda, cinnamon, and sea salt. Whisk until well mixed.

        Combine Wet Ingredients: In another bowl, mix the grated zucchini, melted coconut oil, honey or maple syrup, and vanilla extract. Stir until fully combined.
