2 cups Hatch green chilies, roasted, peeled, and chopped

1 cup sweet corn, fresh or frozen

1 medium zucchini, diced

1 medium red bell pepper, diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and black pepper to taste

1 tablespoon olive oil

8 small corn or flour tortillas

1 avocado, sliced

½ cup fresh cilantro, chopped

Lime wedges, for serving

Optional toppings: crumbled feta or cotija cheese, sour cream, salsa

Prepare the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until soft and translucent.

    Add Garlic and Spices: Stir in the minced garlic, ground cumin, smoked paprika, and chili powder. Cook for another minute until fragrant.

      Cook the Veggies: Add in the zucchini, red bell pepper, and corn. Sauté for approximately 5-7 minutes, or until the veggies are tender but still vibrant.

        Incorporate Hatch Chilies and Beans: Fold in the chopped Hatch chilies and black beans into the skillet. Season with salt and black pepper to taste. Cook for an additional 3-4 minutes until everything is heated through.

          Warm the Tortillas: While your veggie mixture cooks, heat a separate skillet over medium heat. Warm the tortillas one at a time for about 20-30 seconds on each side, until pliable. Keep them warm in a clean kitchen towel.
