2 cups bone broth (or chicken stock)

1 cup shredded rotisserie chicken

2 large eggs

2 tablespoons cornstarch

2 tablespoons water (for slurry)

1 cup Hatch green chiles, diced (fresh or canned)

1 teaspoon ginger, minced

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 cup green onions, sliced

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare Broth: In a large pot over medium heat, add the bone broth, shredded chicken, diced Hatch green chiles, minced ginger, and minced garlic. Stir to combine and bring to a gentle simmer.

    Cook Chicken and Flavors: Let the mixture simmer for about 5-7 minutes, allowing the flavors to meld and the chicken to heat through.

      Make Egg Drop Slurry: In a small bowl, whisk together the cornstarch and water to create a slurry. This will help thicken the soup slightly.
