2 medium zucchinis

2 tablespoons olive oil

3 cloves garlic, minced

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for a kick)

¼ cup grated Parmesan cheese

Fresh parsley, chopped for garnish (optional)

Lemon wedges for serving

Instructions
 

Prepare the Zucchini: Slice the zucchinis lengthwise into ½-inch thick pieces. This will allow for even grilling and maximum flavor absorption.

    Make the Marinade: In a small bowl, mix the olive oil, minced garlic, salt, black pepper, and red pepper flakes (if using). This blend will infuse the zucchini with flavor and help the cheese adhere.

      Marinate the Zucchini: Brush both sides of the zucchini slices with the garlic marinade, ensuring they’re evenly coated. Allow them to marinate for about 15-20 minutes.

        Preheat the Grill: Heat your grill to medium-high heat. If using a grill basket, make sure it's preheated as well.

          Grill the Zucchini: Place the zucchini slices directly on the grill. Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks.

            Add the Parmesan: Just before removing the zucchini from the grill, sprinkle the grated Parmesan cheese evenly over the slices. Close the grill lid and let the cheese melt for about 1 minute.

              Serve and Garnish: Once the cheese has melted and the zucchini is cooked to your liking, remove the slices from the grill and arrange them on a platter. Garnish with fresh parsley and serve with lemon wedges on the side for added brightness.
