4 pieces of flatbread (store-bought or homemade)

1 medium zucchini, sliced into rounds

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 cup cherry tomatoes, halved

1 cup baby spinach leaves

1 cup mozzarella cheese, shredded

1/2 cup feta cheese, crumbled

1/4 cup pesto (store-bought or homemade)

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Prep the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). If using a grill pan, heat it on the stovetop over medium heat.

    Grill the Veggies: In a large bowl, combine zucchini, red and yellow peppers, cherry tomatoes, olive oil, oregano, salt, and pepper. Toss until the veggies are well-coated. Place the vegetables on the grill or grill pan and cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred. Remove from heat and set aside.

      Prepare the Flatbreads: Spread a generous tablespoon of pesto on each piece of flatbread, covering them evenly.

        Assemble the Pizzas: Evenly distribute the grilled veggies on top of the flatbreads. Sprinkle the mozzarella cheese and crumbled feta cheese over the veggies.

          Grill the Pizzas: Carefully place the assembled flatbreads on the grill for about 4-5 minutes, or until the cheese is melted and bubbly. If using a grill pan, you can cover it with a lid to help the cheese melt faster.

            Finishing Touches: Once melted and gooey, remove the flatbreads from the grill. Garnish with fresh basil leaves, if desired. Slice into wedges and serve immediately.
