Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh pineapple, cut into chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

2 tablespoons olive oil

3 tablespoons soy sauce

2 tablespoons honey

2 garlic cloves, minced

1 teaspoon ground ginger

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon smoked paprika (optional)

Fresh cilantro or parsley for garnish (optional)

Skewers (wooden or metal)

Instructions

Marinate the Chicken:

    - In a bowl, mix the olive oil, soy sauce, honey, minced garlic, ground ginger, black pepper, salt, and smoked paprika (if using).

      - Add the chicken cubes to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 1 hour (up to overnight for best flavor).

        Prepare Skewers:

          - If you are using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

            Assemble the Skewers:

              - Thread the marinated chicken, pineapple chunks, red and green bell peppers, and red onion pieces alternately onto the skewers. Leave a little space between each piece to ensure even cooking.

                Preheat the Grill:

                  - Preheat your grill to medium-high heat (about 400°F/200°C). You can lightly oil the grill grates to prevent sticking.

                    Grill the Skewers:

                      - Place the skewers on the grill and cook for about 12-15 minutes, turning every few minutes, until the chicken is cooked through (internal temperature should reach 165°F/75°C) and has a beautiful char. The pineapple should also have grill marks and become slightly caramelized.

                        Serve:

                          - Remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh cilantro or parsley if desired. Serve warm with your choice of sides like rice, salad, or a light dipping sauce.
