Grilled Lemon Cobbler

2 cups fresh blueberries

2 cups fresh sliced peaches

1 cup granulated sugar, divided

1 tablespoon lemon zest

1/4 cup freshly squeezed lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup whole milk

1/4 cup unsalted butter, melted

Vanilla ice cream, for serving

Fresh mint leaves, for garnish

Instructions
 

Preheat your grill to medium heat (about 350°F/175°C) and prepare a grill-safe baking dish or cast-iron skillet.

    In a large mixing bowl, combine blueberries, sliced peaches, 1/2 cup of sugar, lemon zest, lemon juice, and vanilla extract. Gently toss to combine and set aside to marinate for about 15 minutes.

      In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt.

        Slowly stir in the milk and melted butter into the flour mixture until just combined, being careful not to overmix. The batter should be lumpy.

          Once the fruit has marinated, pour the fruit mixture into the prepared baking dish or skillet. Carefully spoon the batter over the top of the fruit, spreading it gently to cover as much as possible.

            Cover the dish tightly with aluminum foil, making sure it's secure to avoid water entering.

              Place the covered dish directly on the grill grates. Close the grill lid and cook for about 25-30 minutes, or until the topping is golden brown and a toothpick inserted into the batter comes out clean.

                Once cooked, carefully remove the dish from the grill and let it cool for 5-10 minutes.

                  Serve warm with a scoop of vanilla ice cream on top, garnished with fresh mint leaves for a pop of color and flavor.
