12 oz. pasta (penne or fettuccine recommended)

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

2 green chilies, finely chopped (adjust to heat preference)

4 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for extra spice)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and green chilies, cooking for another 2 minutes until fragrant.

      Add Spinach: Gradually add the fresh spinach to the skillet, stirring until wilted, about 3 minutes.

        Make the Cream Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Simmer the sauce for about 5 minutes, allowing it to thicken slightly. If the sauce gets too thick, add a bit of the reserved pasta water to adjust to your desired consistency.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy spinach sauce. Toss well to coat the pasta evenly. If needed, add more reserved pasta water to help create a smoother sauce.

            Serve: Plate the pasta, garnishing with fresh basil leaves. Optionally, sprinkle with additional Parmesan cheese and a dash of red pepper flakes for an extra kick.
