2 cups cooked chicken, shredded (or rotisserie chicken)

1 cup frozen peas and carrots mix

1 cup frozen corn

1 medium onion, diced

2 cloves garlic, minced

3 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

1/4 cup all-purpose flour

2 tablespoons olive oil

1 tablespoon butter

1 can (16.3 oz) refrigerated flaky biscuits

1 cup shredded cheddar cheese (optional)

Fresh herbs for garnish (parsley or thyme)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat olive oil and butter over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3-4 minutes.

      Make the Sauce: Sprinkle the flour over the onion and garlic mixture, stirring to coat. Slowly add in the chicken broth while continuously stirring to avoid lumps. Cook for about 2-3 minutes until the mixture thickens slightly.

        Add Chicken and Veggies: Stir in the shredded chicken, frozen peas and carrots, frozen corn, heavy cream, thyme, and parsley. Season with salt and pepper to taste. Let it simmer for 5 minutes, allowing flavors to meld.

          Transfer to Casserole Dish: Pour the chicken and vegetable mixture into a greased 9x13 inch casserole dish. If you are using cheese, sprinkle it over the filling.

            Prep the Biscuits: Open the can of refrigerated biscuits and cut each biscuit in half. You can either place the biscuit halves neatly on top of the filling or tear them into smaller pieces for a more rustic look.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbling.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh herbs before serving.
