Ingredients

2 large sweet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: a pinch of red pepper flakes for heat

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: Wash and peel the sweet potatoes, then cut them into thin fries, about 1/4 inch thick to ensure even cooking.

Season the Fries: In a large mixing bowl, toss the sweet potato fries with olive oil, minced garlic, sea salt, black pepper, and smoked paprika until they are well coated.

Arrange on Baking Sheet: Spread the sweet potato fries out in a single layer on the prepared baking sheet, ensuring they are not overcrowded. This helps them get crispy.

First Bake: Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy.

Add Parmesan: Remove the fries from the oven, sprinkle the grated Parmesan cheese over the top while they are still hot, and return them to the oven for an additional 5 minutes to melt the cheese.

Garnish and Serve: Once done, take the fries out and garnish with chopped fresh parsley and a pinch of red pepper flakes if desired. Serve immediately for the best texture and taste!
