Ingredients

1 pound (450g) cremini or button mushrooms, cleaned and halved

2 cups broccoli florets

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon lemon juice

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Vegetables: In a large mixing bowl, combine the halved mushrooms and broccoli florets.

Make the Garlic Butter: In a small saucepan over low heat, melt the butter. Once melted, add in the minced garlic, fresh thyme, salt, and black pepper. Stir well and let it bubble lightly for about 1-2 minutes, just until the garlic is fragrant but not browned.

Combine Ingredients: Drizzle the garlic butter over the mushroom and broccoli mixture. Add the olive oil, lemon juice, and lemon zest. Toss everything together until the vegetables are evenly coated.

Spread on a Baking Sheet: On a large baking sheet lined with parchment paper, spread the coated mushrooms and broccoli in a single layer. This ensures even roasting.

Roast the Vegetables: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, stirring halfway through. You want the mushrooms to be golden brown and the broccoli tender-crisp.

Serve: Once roasted, remove from the oven and garnish with freshly chopped parsley. Serve hot as a delicious side dish or a light main course!
