Ingredients

2 lbs baby potatoes (red or yellow)

1/2 cup unsalted butter (1 stick)

6 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for some heat)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Potatoes: Wash the baby potatoes thoroughly to remove any dirt. Pat them dry with a kitchen towel.

Melt the Butter: In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and stir in the minced garlic, rosemary, thyme, salt, black pepper, and red pepper flakes (if using) until combined.

Coat the Potatoes: In a large mixing bowl, add the baby potatoes. Pour the garlic butter mixture over the potatoes and toss well to ensure they are evenly coated.

Arrange on Baking Sheet: Line a baking sheet with parchment paper (for easier cleanup). Spread the coated potatoes out in a single layer, making sure they’re not crowded.

Roast the Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for about 30-35 minutes, or until they are golden brown and fork-tender. Toss them halfway through the cooking time for even browning.

Garnish and Serve: Once roasted, remove the potatoes from the oven. Sprinkle freshly chopped parsley over the top for a nice touch of color and flavor. Serve warm as a side dish.
