2 cups cooked jasmine rice (preferably day-old)

1 cup mixed fruits (diced strawberries, kiwi, pineapple, and blueberries)

1/2 cup shredded mozzarella cheese

1/4 cup cream cheese (softened)

2 tbsp mayonnaise

1 tbsp honey or agave syrup

2 tbsp coconut flakes (optional)

1 tablespoon olive oil

1/2 tsp vanilla extract

Fresh mint leaves (for garnish)

Pinch of salt

Prepare the Sauce: In a small bowl, mix together the softened cream cheese, mayonnaise, honey or agave syrup, and vanilla extract until smooth. Set aside.

    Heat the Pan: In a large frying pan or wok, heat the olive oil over medium heat.

      Fry the Rice: Add the cooked jasmine rice to the hot pan, stirring gently to heat through. Cook for about 3-4 minutes until the rice starts to crisp slightly.
