2 cups plain Greek yogurt

1/2 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup unsalted pistachios, shelled and roughly chopped

1 cup frozen raspberries (or your choice of berries)

2 tablespoons lemon juice

1 tablespoon agave syrup or honey (optional)

Prepare the Yogurt Base: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well mixed and smooth.

    Make the Berry Swirl: In a separate small bowl, combine the frozen raspberries, lemon juice, and agave syrup (if using). Use a fork or a small blender to mash up the berries until you achieve a chunky sauce.

      Combine Bases: Fold the chopped pistachios into the yogurt mixture. This adds a delightful crunch to your bars.

        Layer the Mixtures: In a parchment-lined 9x5 inch loaf pan (or similar), pour half of the yogurt mixture into the bottom. Spread it evenly. Next, dollop half of the berry mixture on top of the yogurt. Use a knife or skewer to create gentle swirls, making sure not to fully integrate the two mixtures.

          Repeat the Layers: Carefully pour the remaining yogurt mixture on top of the first layer, then top it with the remaining berry sauce. Again, swirl gently to create a marbled effect.

            Freeze: Cover the loaf pan with plastic wrap and freeze for at least 4 hours, or until completely solid.

              Slice and Serve: Once frozen, remove the bars from the pan by lifting the parchment paper. Let sit for a few minutes to soften slightly, then slice into bars with a warm knife for clean cuts.
