Ingredients

2 cups vanilla yogurt (Greek or regular)

1 cup granola (your choice of flavors)

1/2 cup chopped mixed nuts (almonds, walnuts, pecans)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

1/2 cup mini chocolate chips or dried fruits (for extra sweetness)

8 whole grain or almond flour cookies (store-bought or homemade)

Instructions

Prep the Yogurt: In a mixing bowl, combine the vanilla yogurt, honey or maple syrup, vanilla extract, and cinnamon (if using). Stir until well mixed.

Mix Add-Ins: Gently fold in the granola, chopped nuts, and mini chocolate chips or dried fruits until evenly distributed throughout the yogurt mixture.

Assemble the Sandwiches: Lay out four cookies on a flat surface. Spoon a generous amount of the yogurt-nut mixture onto each cookie, creating a thick layer. Top each with another cookie to form a sandwich.

Freeze the Sandwiches: Place the assembled sandwiches on a baking tray lined with parchment paper. Freeze for at least 2-3 hours, or until the yogurt is solid and the sandwiches are firm.

Serve: Once frozen, remove the sandwiches from the freezer and let them sit for a few minutes to soften slightly for easier biting. Serve and enjoy immediately, or store them wrapped in plastic wrap for a cold treat on the go!
