2 ripe mangos, peeled and diced

1 cup coconut yogurt (or regular yogurt if preferred)

1 cup canned coconut milk

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

½ cup shredded unsweetened coconut

¼ teaspoon sea salt

1 tablespoon lime juice (for a zesty kick)

Instructions
 

Prepare the Mango Puree: In a blender, add the diced mangoes and blend until smooth. You may leave small chunks if you like some texture. Set aside.

    Mix the Yogurt Base: In a large mixing bowl, combine the coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, lime juice, and sea salt. Whisk until everything is well incorporated and smooth.

      Layer the Mixture: Take silicone molds or ice cube trays and start by pouring a thin layer of the yogurt mixture into the bottom of each mold. Tap gently to remove air bubbles.

        Add Mango Puree: Spoon a small amount of the mango puree on top of the yogurt layer, creating the first layer of the bomb.

          Repeat Layers: Continue to alternate the yogurt mixture and mango puree, ending with a yogurt layer on top. This should create beautiful, colorful layers.

            Add Shredded Coconut: Once all layers are complete, sprinkle shredded coconut generously over the top layer of yogurt. Press it gently to ensure it adheres to the mixture.

              Freeze: Cover the molds with plastic wrap or lids and place in your freezer. Allow them to freeze for at least 4 hours, but overnight is best for a firmer texture.

                Unmold and Serve: Once frozen, remove the yogurt bombs from the molds by gently twisting or pulling. If they are sticking, run a bit of warm water on the outside of the molds for easy removal.
