1 cup plain Greek yogurt

1 cup fresh figs, chopped (or dried figs if fresh aren’t available)

3 tablespoons honey (plus extra for drizzling)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 teaspoon cinnamon

Pinch of salt

12 mini cupcake liners or small silicone cups

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Fig Mixture: In a medium bowl, combine the chopped figs, 1 tablespoon of honey, lemon juice, cinnamon, and a pinch of salt. Mix well and set aside to allow the figs to macerate for about 10-15 minutes.

    Make the Yogurt Base: In another bowl, combine the Greek yogurt, vanilla extract, and remaining 2 tablespoons of honey. Stir until smooth and creamy.

      Layer the Cups: Place your mini cupcake liners or silicone cups on a baking sheet for stability. Spoon about a tablespoon of the yogurt mixture into each cup, followed by a spoonful of the fig mixture. Repeat, layering until the cups are almost full, finishing with a dollop of yogurt on top.

        Freeze the Cups: Place the baking sheet with the filled cups in the freezer. Allow them to freeze for at least 4 hours, or until solid.

          Serve: Once frozen, remove the cups from the freezer. If using cupcake liners, you can peel them away easily. Drizzle with additional honey and garnish with fresh mint leaves if desired.

            Enjoy: Serve immediately for a refreshing treat or store in an airtight container in the freezer for up to 2 weeks.
