Frozen Yogurt Cherry Almond Bars

2 cups plain Greek yogurt

1 cup pitted cherries, fresh or frozen (if using frozen, thaw and drain them)

1/2 cup of almond butter

1/4 cup honey or maple syrup

1 teaspoon almond extract

1/4 teaspoon vanilla extract

1/2 cup sliced almonds (optional for topping)

A pinch of salt

Prepare the Cherry Mixture: In a medium bowl, puree the cherries using a blender or fork until they're mostly smooth but still have some small chunks. If you prefer a smoother texture, blend them until pureed to your liking.

    Mix Yogurt Base: In a separate large bowl, whisk together the Greek yogurt, almond butter, honey (or maple syrup), almond extract, vanilla extract, and a pinch of salt until everything is fully combined and smooth.

      Combine the Mixtures: Gently swirl the pureed cherries into the yogurt mixture, being careful not to fully blend them in. You want swirls of cherry throughout the yogurt for both flavor and visual appeal.

        Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

          Pour and Spread: Pour the cherry yogurt mixture into the prepared baking dish. Use a spatula to spread it out evenly.

            Add Toppings (Optional): If desired, sprinkle sliced almonds on top of the mixture for added crunch and flavor.

              Freeze: Place the baking dish in the freezer and freeze for at least 4-6 hours, or until the bars are completely solid.
