Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries, or blackberries)

1 tablespoon lemon juice

A pinch of salt

Optional: Fresh mint for garnish

Instructions

Prepare the Berry Mixture:

    - In a blender, combine the mixed berries, lemon juice, and a tablespoon of honey or maple syrup. Blend until smooth. If you prefer a chunkier texture, pulse a few times to leave some berry bits intact. Set aside.

      Make the Yogurt Base:

        - In a large bowl, mix the Greek yogurt, the remaining honey or maple syrup, vanilla extract, and a pinch of salt until well combined and smooth.

          Layer the Pops:

            - Start by spooning a layer of the yogurt mixture into your popsicle molds, filling each mold about a third of the way.

              - Then, add a layer of the berry mixture on top of the yogurt layer, filling each mold to about the two-thirds mark.

                - Finally, top off each mold with another layer of the yogurt mixture, leaving a little space at the top for expansion during freezing.

                  Swirl the Layers:

                    - Using a skewer or a toothpick, gently swirl the yogurt and berry mixtures together to create a beautiful marbled effect. Be careful not to overmix; you want to see both layers.

                      Insert Sticks and Freeze:

                        - Place the popsicle sticks into the molds (if using a separate stick holder, follow the manufacturer's instructions).

                          - Cover the molds with a lid or plastic wrap and place them in the freezer. Freeze for at least 4-6 hours or until solid.

                            Unmold and Serve:

                              - To remove the pops, run warm water over the outside of the molds for a few seconds to help loosen them. Gently pull on the sticks to release the pops.

                                - Optional: Garnish with fresh mint before serving. Enjoy your refreshing frozen treats!
