2 cups frozen raspberries

1/4 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon lemon juice

For the crumble:

1 1/2 cups rolled oats

1 cup all-purpose flour

1/2 cup shredded unsweetened coconut

1/2 cup brown sugar, packed

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted (plus more for greasing)

1 teaspoon vanilla extract

Prepare the Pan: Preheat your oven to 350°F (175°C). Grease an 8x8 inch square baking pan with butter and line it with parchment paper, allowing some overhang for easy removal later.

    Make the Raspberry Filling: In a medium saucepan over medium heat, combine the frozen raspberries, granulated sugar, cornstarch, and lemon juice. Stir gently and cook until the raspberries break down and the mixture thickens (about 5-7 minutes). Remove from heat and set aside to cool slightly.

      Prepare the Crumble Mixture: In a large mixing bowl, combine the rolled oats, flour, shredded coconut, brown sugar, baking soda, and salt. Mix well. Pour the melted butter and vanilla extract into the dry ingredients, stirring until everything is evenly combined and crumbly.

        Assemble the Bars: Press approximately two-thirds of the crumble mixture into the bottom of the prepared baking pan to form a crust. Spread the raspberry filling evenly over the crust, then sprinkle the remaining crumble mixture on top, ensuring it covers the filling.

          Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the crumble topping is golden and the filling is bubbly.
