Frozen Mango Coconut Chia Rounds

Ingredients
  

1 cup ripe mango, diced (fresh or frozen)

1 cup coconut milk (canned or carton)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional toppings: shredded coconut, diced mango, or nuts for garnish

Instructions
 

Blend the Mango Mixture: In a blender, combine the diced mango, coconut milk, honey (or maple syrup), vanilla extract, and sea salt. Blend until smooth and creamy.

    Add the Chia Seeds: Pour the blended mango mixture into a mixing bowl. Stir in the chia seeds until they are evenly distributed. Allow the mixture to sit for about 5 minutes to let the chia seeds absorb some of the liquid and thicken.

      Prepare the Silicone Molds: Lightly grease a silicone muffin tray or mold with cooking spray to ensure easy removal. You can also use paper liners for the rounds if desired.

        Fill the Molds: Spoon the mango-chia mixture into the prepared molds, filling each about 3/4 full. Smooth the tops for a neat finish.

          Freeze: Place the filled molds in the freezer and freeze for at least 3-4 hours or until completely solid.

            Serve: Once frozen, pop the chia rounds out of the molds. You can enjoy them straight from the freezer or let them sit for a couple of minutes to slightly soften.

              Garnish (Optional): Sprinkle with shredded coconut, extra diced mango, or nuts to enhance the beauty and flavor before serving.
