2 cups plain Greek yogurt

1/4 cup honey (or maple syrup for a vegan option)

Zest and juice of 1 large lemon

1 cup fresh blueberries (you can also use frozen if preferred)

1/2 teaspoon vanilla extract

1/4 cup granola (for topping, optional)

Fresh mint leaves (for garnish, optional)

Instructions
