Ingredients

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

2 cups Greek yogurt (plain or vanilla)

1 cup sweetened condensed milk

¾ cup fresh key lime juice (about 8-10 key limes)

Zest of 2 key limes

½ teaspoon vanilla extract

Pinch of salt

Whipped cream (for topping)

Lime slices and zest (for garnish)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.

Press the Crust: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal. Press the graham cracker mixture firmly into the bottom of the dish using the back of a measuring cup or your fingers to ensure an even layer. Place the dish in the freezer while you prepare the filling.

Make the Filling: In a large mixing bowl, whisk together the Greek yogurt, sweetened condensed milk, key lime juice, lime zest, vanilla extract, and a pinch of salt until smooth and creamy. Make sure there are no lumps; the mixture should be well incorporated.

Fill the Crust: Remove the crust from the freezer and pour the key lime filling over the chilled crust, spreading it evenly with a spatula.

Freeze the Bars: Cover the dish with plastic wrap or aluminum foil and place it in the freezer for a minimum of 4 hours, or until completely solid.

Cut and Serve: Once set, remove the bars from the freezer and lift them out of the baking dish using the parchment paper overhang. Place on a cutting board and slice into squares or bars.

Garnish and Enjoy: Top each bar with a dollop of whipped cream and a slice of lime or a sprinkle of lime zest for an extra touch. Serve immediately or store any leftovers in the freezer, covered.
