Frozen Coconut Pineapple Cups

2 cups coconut milk (canned or carton)

1 medium ripe pineapple, peeled, cored, and diced

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup shredded coconut (sweetened or unsweetened)

Optional toppings: chopped nuts, fresh mint leaves, or additional pineapple chunks

Instructions
 

Prep the Pineapple: Begin by preparing your pineapple. Cut it into small cubes and set aside about 1/4 cup for garnish.

    Blend the Base: In a blender, combine the coconut milk, diced pineapple (reserve the 1/4 cup), honey or maple syrup, vanilla extract, and salt. Blend on high until the mixture is completely smooth and creamy.

      Add Coconut: Pour the blended mixture into a bowl and stir in the shredded coconut. Make sure it’s well mixed and let it sit for about 5 minutes to allow the coconut to absorb some moisture.

        Fill the Cups: Take small cups or silicone molds and fill them about 3/4 full with the coconut-pineapple mixture. Leave a little space at the top for expansion as they freeze.

          Garnish: If desired, sprinkle the reserved pineapple chunks or any optional toppings such as chopped nuts or mint leaves on top of each cup.

            Freeze: Place the cups in the freezer and let them freeze for at least 4-6 hours or until solid.

              Serve and Enjoy: To serve, run the outside of the cups under warm water for a few seconds to loosen the mixture. Carefully remove the frozen coconut pineapple cups and enjoy them right away!
