Frozen Chocolate Coconut Banana Bites

2 ripe bananas, peeled and sliced into 1-inch thick rounds

1 cup dark chocolate chips or dairy-free chocolate chips

1 cup unsweetened shredded coconut

1 tablespoon coconut oil

1 tablespoon maple syrup (optional, for extra sweetness)

Pinch of sea salt

Prepare the Banana Slices: Place the sliced bananas on a parchment-lined baking sheet, spreading them out so they don’t touch each other. Freeze for about 1 hour or until completely solid.

    Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

      Add Sweetness (Optional): If you'd like a sweeter chocolate coating, stir in the maple syrup and a pinch of sea salt until well combined.

        Coat the Banana Slices: Remove the frozen banana slices from the freezer. Dip each slice into the melted chocolate, ensuring they are fully coated. You can use a fork or toothpick for easy handling.

          Coconut Coating: Immediately after coating in chocolate, sprinkle the shredded coconut over the chocolate-covered banana slice, allowing the coconut to stick. You can also roll the slice in the coconut for thorough coverage.

            Set the Bites: Place the coated banana bites back on the parchment-lined baking sheet. Once all the banana slices are coated, return them to the freezer for another 30 minutes to allow the chocolate to fully set.
