Frozen Chocolate Banana Sandwiches

2 ripe bananas

½ cup creamy peanut butter (or almond butter)

½ cup semi-sweet chocolate chips

¼ cup finely chopped nuts (e.g., walnuts or almonds)

1 tablespoon coconut oil (optional, for melting chocolate)

A pinch of sea salt (optional)

4 slices whole grain bread or gluten-free bread (optional for sandwiches)

Instructions
 

Prepare the Bananas: Peel the bananas and slice each one into rounds, about ½ inch thick. You can also cut them lengthwise if you prefer larger pieces.

    Make the Peanut Butter Layer: In a small bowl, mix the peanut butter with a pinch of sea salt (if using) for added flavor.

      Assemble the Sandwiches:

        - Take one banana slice and spread a small amount of the peanut butter mixture on top.

          - Top with another banana slice to create a mini sandwich. Repeat until you have enough mini banana sandwiches (about 12-15).

            Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until smooth and fully melted.

              Coat the Sandwiches: Dip each banana sandwich into the melted chocolate, ensuring it's coated on all sides. You can also drizzle chocolate over them for a decorative touch.

                Add the Topping: Before the chocolate sets, sprinkle finely chopped nuts over the top of the chocolate-coated sandwiches.
