Frozen Cherry Yogurt Crunch Bars

2 cups frozen cherries, pitted

1 ½ cups Greek yogurt (plain or vanilla)

3 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup granola (your choice, for added crunch)

½ cup dark chocolate chips (optional, for drizzling)

¼ cup slivered almonds (optional, for extra crunch)

Pinch of salt

Blend the Cherries: In a blender or food processor, add the frozen cherries and blend until smooth. If you prefer a chunkier texture, reserve a handful of cherries and stir them in after blending.

    Mix Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until well combined and creamy.

      Layer the Ingredients: Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal. Pour half of the yogurt mixture into the bottom of the dish and spread it evenly.

        Cherry Layer: Spoon the blended cherry mixture over the yogurt layer, spreading it evenly across the surface.

          Add Remaining Yogurt: Pour the remaining yogurt mixture over the cherry layer, smoothing it out with a spatula until it covers the cherries completely.

            Sprinkle the Crunch: Evenly sprinkle the granola and slivered almonds (if using) over the top layer of yogurt, pressing down slightly to ensure they stick.

              Freeze: Cover the dish with plastic wrap and place it in the freezer for at least 4 hours or until completely frozen solid.

                Chocolate Drizzle (Optional): If you’d like to add a chocolate drizzle, melt the dark chocolate chips in a microwave-safe bowl in 20-30 second intervals until smooth. Once the bars are frozen, remove them from the dish using the parchment overhang, cut into squares, and drizzle with melted chocolate.
