Ingredients

2 cups fresh or frozen blueberries

1 cup unsweetened shredded coconut

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

A pinch of salt

Optional: 1/4 cup dark chocolate chips (for drizzling)

Instructions

Prep the Blueberries: If using fresh blueberries, rinse and drain them thoroughly. For frozen blueberries, let them sit out at room temperature for about 10 minutes to soften slightly.

Make the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until smooth and well incorporated.

Combine Blueberries and Coconut: Gently fold the blueberries into the yogurt mixture. Make sure they are evenly coated.

Shape the Clusters: Line a baking sheet with parchment paper. Using a spoon or cookie scoop, drop spoonfuls of the blueberry-yogurt mixture onto the parchment, forming small clusters.

Roll in Coconut: Take each cluster and sprinkle or roll it in the shredded coconut until well coated.

Freeze the Clusters: Place the baking sheet in the freezer and let the clusters freeze for about 2 hours, or until completely firm.

Optional Chocolate Drizzle: If you'd like to add a chocolate drizzle, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals until smooth. Once the clusters are frozen, drizzle the melted chocolate over the top of each cluster before serving.

Serve and Enjoy: Once frozen, transfer the clusters to an airtight container and store in the freezer. Enjoy these sweet, fruity treats straight from the freezer!
