Fresh Tomato Basil Pasta

8 oz spaghetti or your pasta of choice

4 ripe heirloom tomatoes, diced

1 cup fresh basil leaves, loosely packed

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1/2 tsp red pepper flakes (optional)

Salt and freshly cracked black pepper, to taste

1/2 cup freshly grated Parmesan cheese, plus extra for serving

1 tsp balsamic vinegar (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the extra virgin olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Mix Tomatoes and Basil: Add the diced heirloom tomatoes to the skillet, stirring to combine. Cook for about 3-4 minutes, allowing the tomatoes to soften slightly. Stir in the fresh basil and red pepper flakes (if using), and cook for another 2 minutes until the basil is wilted.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the tomato mixture. Toss well to combine, adding some reserved pasta water a little at a time until you reach your desired sauce consistency.

          Season & Serve: Season with salt, freshly cracked black pepper, and balsamic vinegar (if using). Remove from heat and stir in the grated Parmesan cheese.

            Plate & Garnish: Serve immediately, garnished with extra Parmesan cheese and fresh basil leaves as a finishing touch.
