8 ounces of pasta (penne or fusilli works best)

2 cups of mixed vegetables (bell peppers, spinach, and zucchini)

1 cup of marinara sauce

1 cup of ricotta cheese

1 cup of shredded mozzarella cheese

1/2 cup of grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook for about 8-10 minutes until al dente. Drain and set aside.

      Sauté the Vegetables: In a skillet over medium heat, sauté the mixed vegetables for about 5-7 minutes until slightly tender. Season with salt, pepper, and Italian seasoning.

        Mix the Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed vegetables, marinara sauce, ricotta cheese, and half of the mozzarella cheese. Stir until well mixed.

          Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Add Toppings: Sprinkle the remaining mozzarella cheese and the grated Parmesan cheese over the top.

              Bake: Place the pasta bake in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired, then serve warm.
