Ingredients

1 cup rolled oats

1/2 cup almond butter (or nut butter of choice)

1/4 cup honey or maple syrup

1/2 cup mixed nuts (e.g., almonds, walnuts, cashews, roughly chopped)

1/2 cup dried fruit (e.g., cranberries, raisins, or apricots, diced)

1/4 cup dark chocolate chips (optional, for a sweet touch)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional toppings: shredded coconut, chia seeds, or sesame seeds

Instructions

Mix Ingredients: In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, and sea salt. Stir until well combined and creamy.

Add Mix-Ins: Fold in the chopped mixed nuts, dried fruit, and dark chocolate chips (if using). Ensure all ingredients are evenly distributed throughout the mixture.

Form Balls: Using your hands or a cookie scoop, take small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. You should end up with approximately 12-15 bites.

Chill: Place the energy bites on a baking sheet lined with parchment paper or wax paper. Refrigerate for at least 30 minutes to firm up.

Store: Once set, transfer the trail mix bites to an airtight container. They can be stored in the refrigerator for up to a week or frozen for longer shelf life.

Prep Time: 10 minutes | Total Time: 40 minutes (including chilling) | Servings: 12-15 bites
