1 cup uncooked long-grain white rice

1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup vegetable or chicken broth

½ cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ cup breadcrumbs (optional for topping)

2 tablespoons olive oil (optional, for a richer flavor)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook Rice: In a medium saucepan, combine the uncooked rice and broth. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes, or until the rice is cooked. If you're using instant rice, follow package instructions and set aside.

      Prepare the Broccoli: If using fresh broccoli, steam or blanch the florets for about 3-5 minutes until just tender. If using frozen broccoli, just thaw it out. Drain any excess water.

        Mix Ingredients: In a large mixing bowl, combine the cooked rice, cream of mushroom soup, milk, garlic powder, onion powder, and season with salt and pepper. Stir until smooth and well-combined. Add in the cooked broccoli and 1 cup of shredded cheddar cheese. Mix gently until the broccoli is evenly distributed throughout the mixture.
