Ingredients

1 large cucumber, finely diced

1 cup plain Greek yogurt

1/4 cup cream cheese, softened

2 tablespoons fresh dill, chopped

1 tablespoon fresh mint, chopped

1 tablespoon lemon juice

1 tablespoon honey

1 garlic clove, minced

Salt and pepper to taste

1/4 teaspoon smoked paprika (optional, for garnish)

Assorted vegetable sticks (carrots, celery, bell peppers) or pita chips for serving

Instructions

Prepare the Cucumber: Start by washing the cucumber thoroughly. Dice it finely and place it in a clean kitchen towel. Squeeze out any excess water to avoid a watery dip.

Mix the Base: In a medium mixing bowl, combine the Greek yogurt and softened cream cheese. Using an electric mixer or whisk, blend them together until smooth and creamy.

Add Flavor: Stir in the fresh dill, mint, lemon juice, honey, and minced garlic. Mix until well incorporated. This will add layers of refreshing flavor to your dip.

Incorporate Cucumber: Gently fold in the prepared diced cucumber into the yogurt mixture. Be careful not to overmix; you want to maintain some texture in the dip.

Season: Taste your dip, then season it with salt and pepper as needed. Remember that the addition of smoked paprika can also offer a lovely depth of flavor.

Chill: Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld together beautifully.

Serve: Once chilled, give the dip a gentle stir, then transfer it to a serving bowl. Drizzle a little extra honey on top for sweetness, sprinkle a bit of smoked paprika for a pop of color, and serve with your choice of veggie sticks or pita chips.
