Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 bell pepper (red or yellow), diced

1 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and halved

2 tablespoons fresh parsley, chopped

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

Salt and pepper, to taste

Instructions

Prepare the Ingredients: Begin by draining and rinsing the chickpeas in a colander. Dice the cucumber, halve the cherry tomatoes, chop the red onion, and bell pepper. Crumble the feta cheese if it is not pre-crumbled.

Combine the Vegetables: In a large mixing bowl, combine the diced cucumber, cherry tomatoes, chopped red onion, diced bell pepper, and chickpeas. Make sure to mix them gently to keep the chickpeas intact.

Add the Olives and Cheese: Toss the Kalamata olives and crumbled feta cheese into the bowl. Gently fold these ingredients into the veggie mixture.

Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, chopped parsley, chopped oregano, and a pinch of salt and pepper to taste. Adjust seasoning as needed.

Combine Everything: Pour the dressing over the salad ingredients. Toss everything together until evenly coated with the dressing.

Chill and Serve: For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together beautifully.

Garnish and Enjoy: Just before serving, sprinkle a little extra fresh parsley on top for presentation. Serve your refreshing cucumber chickpea Greek salad as a side dish or a light meal. Enjoy!
