Ingredients

2 large cucumbers

1 can (5 oz) of tuna in water, drained

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

2 tablespoons finely chopped red onion

1/4 cup chopped celery

Salt and pepper to taste

Fresh dill or parsley for garnish

Optional: cherry tomatoes, sliced for garnish

Instructions

Prepare the Cucumbers: Cut the cucumbers in half lengthwise. Use a spoon to gently scoop out the seeds and create a hollow center for the filling. Pat them dry with a paper towel to remove excess moisture.

Make the Tuna Filling: In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, chopped red onion, and chopped celery. Mix well until all ingredients are blended. Season with salt and pepper to taste.

Fill the Cucumber Boats: Spoon the tuna mixture generously into each hollowed-out cucumber half, ensuring they are well-filled.

Garnish: Sprinkle fresh dill or parsley over the filled cucumber boats. If desired, add sliced cherry tomatoes on top for an extra burst of flavor and color.

Chill (optional): For best flavor, refrigerate the cucumber tuna boats for about 15-30 minutes before serving.

Serve: Arrange the cucumber boats on a platter and enjoy as a healthy snack or appetizer.
