Ingredients

2 cups diced carrots

2 cups diced celery

1 large onion, chopped

3 cloves garlic, minced

1 zucchini, diced

1 can (14.5 oz) diced tomatoes (with juice)

1 cup green beans, chopped

1 cup corn kernels (fresh or frozen)

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach or kale, roughly chopped

1 tablespoon olive oil

Optional: ½ teaspoon red pepper flakes (for a spicy kick)

Instructions

Prep the Vegetables: Begin by washing and chopping all the vegetables into bite-sized pieces. This ensures even cooking and makes for a visually appealing soup.

Sauté the Aromatics: In a skillet over medium heat, add the olive oil and sauté the chopped onion and minced garlic for about 3-4 minutes until the onion becomes translucent and fragrant.

Combine Ingredients in the Crockpot: Transfer the sautéed onion and garlic into the crockpot. Add the diced carrots, celery, zucchini, green beans, corn, and diced tomatoes (with their juice).

Add Broth & Seasonings: Pour in the vegetable broth, then stir in the dried thyme, oregano, bay leaf, and red pepper flakes (if using). Season with salt and pepper to taste.

Cook the Soup: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors are well combined.

Finish with Greens: About 30 minutes before serving, stir in the fresh spinach or kale. This will add a lovely color and extra nutrients to your soup.

Serve and Enjoy: Remove the bay leaf before serving. Serve warm with crusty bread, and enjoy the comforting flavors of your homemade vegetable soup!
