1 cup dried green or brown lentils, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 red bell pepper, chopped

1 zucchini, chopped

1 cup diced tomatoes (canned or fresh)

4 cups vegetable broth

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon apple cider vinegar (optional)

Fresh parsley, for garnish

Prepare the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the garlic, carrots, and celery, cooking for another 3-4 minutes until softened. Remove from heat.

    Combine Ingredients: In the crockpot, add the rinsed lentils, sautéed vegetables, chopped red bell pepper, zucchini, and diced tomatoes.

      Season the Stew: Pour in the vegetable broth, then sprinkle in the ground cumin, smoked paprika, dried thyme, salt, and pepper. Add the bay leaf for extra flavor.

        Cook in the Crockpot: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the lentils and vegetables are tender.

          Finishing Touches: Once cooked, stir in the apple cider vinegar for brightness and adjust seasoning with more salt and pepper, if necessary. Remove the bay leaf before serving.
