Crispy Zucchini Parmesan Sticks

2 medium zucchinis

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably Panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Olive oil spray (or for frying)

Marinara sauce, for dipping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.

    Prepare the Zucchini: Rinse the zucchinis and dry them with a paper towel. Cut off the ends and slice each zucchini into sticks about 1/2 inch wide and 4 inches long.

      Set Up Breading Station: In a shallow dish, place the all-purpose flour seasoned with a pinch of salt and pepper. In another dish, add the beaten eggs. In a third dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, and a little more salt and pepper.

        Coat the Zucchini Sticks: Working in batches, coat each zucchini stick in flour, shaking off any excess. Next, dip it in the beaten eggs, allowing the excess to drip off. Finally, roll the stick in the breadcrumb mixture, pressing firmly to adhere the coating.

          Arrange on Baking Sheet: Place the coated zucchini sticks on the prepared baking sheet, making sure they are spaced out and not touching each other. If desired, lightly spray the sticks with olive oil to help them crisp up in the oven.

            Bake: Bake in the preheated oven for 20-25 minutes, turning halfway through, until the zucchini sticks are golden brown and crispy.

              Serve: Once cooked, remove from the oven and let cool for a minute. Serve warm with marinara sauce on the side for dipping.
