1 lb large shrimp, peeled and deveined

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

4 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded cabbage

1 ripe avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Optional: 1/2 cup sour cream or Greek yogurt for topping

Instructions
 

Marinate the Shrimp: In a bowl, combine the peeled and deveined shrimp with minced garlic, smoked paprika, cayenne pepper, salt, and pepper. Mix well and let marinate for at least 15 minutes to absorb the flavors.

    Prepare the Breading Station: Set up three bowls for the breading process. In the first bowl, place the all-purpose flour; in the second, add the beaten eggs; and in the third, pour the panko breadcrumbs.

      Bread the Shrimp: Take each marinated shrimp and coat it first in the flour, shaking off the excess. Next, dip it into the beaten eggs, and finally coat it in panko breadcrumbs, pressing gently to ensure the breadcrumbs stick well.

        Fry the Shrimp: Heat a large skillet over medium-high heat and add enough oil to cover the bottom of the pan. Once the oil is hot, add the breaded shrimp in batches (don’t crowd the pan) and fry for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer the cooked shrimp onto a paper towel-lined plate to drain excess oil.
