Ingredients

For the Crispy Chicken

4 boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

1/2 tsp cayenne pepper (optional for heat)

Salt and pepper, to taste

Oil for frying (vegetable or canola)

For the Apple Slaw

2 cups green cabbage, finely shredded

1 large apple, cored and julienned (Granny Smith works well)

1/2 cup carrots, julienned

1/4 cup red onion, thinly sliced

1/4 cup mayonnaise

1 tbsp Dijon mustard

1-2 tbsp apple cider vinegar (to taste)

Salt and pepper, to taste

Instructions

Marinate the Chicken:

    - Place the chicken thighs in a bowl and pour the buttermilk over them. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Prepare the Slaw:

        - In a large bowl, combine the shredded cabbage, apple, carrots, and red onion.

          - In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Adjust seasoning to taste.

            - Pour the dressing over the cabbage mixture and toss until everything is well coated. Cover and refrigerate until serving.

              Coat the Chicken:

                - In a shallow dish, mix the flour, garlic powder, paprika, cayenne pepper, salt, and pepper. Remove chicken from the buttermilk, letting excess drip off, and coat each piece in the flour mixture, pressing gently to adhere.

                  Fry the Chicken:

                    - Heat oil in a large skillet over medium-high heat until shimmering (about 350°F or 175°C).

                      - Carefully add the coated chicken thighs in batches, being sure not to overcrowd the pan. Fry for about 5-7 minutes per side or until golden brown and cooked through (internal temperature of 165°F or 74°C).

                        - Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.

                          Serve:

                            - Plate the crispy chicken alongside a generous serving of apple slaw. Drizzle any remaining slaw dressing over the chicken for added flavor.

Enjoy your Crispy Chicken with Apple Slaw while it's hot and crispy, paired with your favorite sides for a complete meal!
