4 large russet potatoes

3 tablespoons olive oil

2 tablespoons Cajun seasoning (store-bought or homemade)

1 cup shredded cheddar cheese

1 cup crumbled queso blanco or feta cheese

1 can (15 oz) black beans, rinsed and drained

1 medium jalapeño, sliced

1 medium tomato, diced

1/2 cup sour cream

1/2 cup guacamole

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the russet potatoes thoroughly. Cut each potato into wedges (about 8 wedges per potato).

      Season the Wedges: In a large mixing bowl, toss the potato wedges with olive oil, Cajun seasoning, salt, and pepper until evenly coated.

        Bake the Wedges: Arrange the potato wedges in a single layer on a baking sheet lined with parchment paper. Bake for 30-35 minutes, flipping halfway through, until they are crispy and golden brown.

          Add the Toppings: Once the wedges are done baking, remove them from the oven. Sprinkle the shredded cheddar cheese evenly across the hot potato wedges, then layer on the crumbled queso blanco, black beans, jalapeño slices, and diced tomato.

            Melt the Cheese: Return the loaded potato wedges to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Serve: Carefully remove the nachos from the oven. Drizzle with sour cream and guacamole, and garnish with fresh cilantro.
