Crispy Buffalo Chicken Wraps

2 large chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup buffalo sauce (store-bought or homemade)

4 large flour tortillas (burrito size)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar cheese

1/4 cup ranch dressing or blue cheese dressing (for drizzling)

Instructions
 

Marinate the Chicken: In a bowl, add the chicken breasts and pour in the buttermilk. Season with salt and pepper, then cover and let marinate in the refrigerator for at least 1 hour (or up to overnight for maximum flavor).

    Prepare the Breading Station: In one bowl, combine the flour with garlic powder, onion powder, smoked paprika, salt, and pepper. In a second bowl, place the breadcrumbs. Remove the chicken from the buttermilk, allowing excess to drip off.

      Bread the Chicken: Dip each chicken breast first into the flour mixture, ensuring an even coat, then dip into the breadcrumbs, pressing lightly to adhere the breadcrumbs well.

        Fry the Chicken: Heat about 1 inch of oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the breaded chicken and fry for about 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F). Transfer to a paper towel-lined plate to drain excess oil.
