1 lb ground beef or turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1/4 cup balsamic vinegar

1 tablespoon honey

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 avocado, sliced

1/2 cup crumbled feta cheese or queso fresco

Fresh cilantro, chopped for garnish

Instructions
 

Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent and fragrant, about 3-4 minutes.

    Add Vegetables: Add the diced bell pepper and continue to cook for another 3-4 minutes until softened.

      Add Ground Meat: Increase the heat slightly and add the ground beef or turkey. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 6-8 minutes.

        Spice It Up: Stir in the cumin, paprika, salt, and pepper. Mix well to coat the meat with the spices.

          Prepare Balsamic Reduction: In a small bowl, whisk together balsamic vinegar and honey. Pour this mixture into the skillet, stirring to combine. Allow the meat to simmer in the balsamic sauce for about 5 minutes until it thickens slightly. Adjust seasoning if necessary.

            Crisp the Tortillas: In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable. For extra crispiness, you can lightly fry each tortilla in a bit of oil until golden and crisp.

              Assemble Tacos: To assemble, place a generous portion of the balsamic-flavored meat in each tortilla. Top with shredded lettuce, diced tomatoes, avocado slices, and crumbled feta or queso fresco.
