Crispy Baked Chicken Tenders

1 lb chicken breast, cut into strips

1 cup buttermilk

1 cup all-purpose flour

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional)

Salt and black pepper to taste

Cooking spray or olive oil for drizzling

Marinate the Chicken: In a bowl, soak the chicken strips in buttermilk for at least 30 minutes (or up to 2 hours in the refrigerator) to tenderize and infuse flavor.

    Prepare the Coating: In a large shallow dish, mix together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and a generous pinch of salt and black pepper.

      Create the Breadcrumb Mixture: In another bowl, combine the breadcrumbs with grated Parmesan cheese and a light sprinkle of salt and pepper for seasoning.

        Breading the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each strip in the flour mixture, shaking off any excess, then dip it back into the buttermilk briefly, followed by coating it in the breadcrumb mixture. Press gently to ensure the breadcrumbs adhere well.

          Prepare for Baking: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.

            Arrange on the Baking Sheet: Place the coated chicken tenders on the prepared baking sheet in a single layer, ensuring they don’t touch each other for optimal crisping.
