2 cups cooked shredded chicken

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup salsa (your favorite brand or homemade)

1 tsp ground cumin

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

10-12 small corn tortillas

Olive oil spray or melted coconut oil for brushing

Fresh cilantro and lime wedges for serving (optional)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Mix the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, salsa, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix everything well until fully combined and creamy.

      Prepare the Tortillas: To make the corn tortillas pliable, wrap them in a damp paper towel and microwave for 30 seconds. This softens them, making it easier to roll.

        Assemble the Taquitos: Take a tortilla and place about 2-3 tablespoons of the chicken mixture in the center. Roll the tortilla tightly, ensuring the filling is enclosed. Place the rolled taquito seam-side down on a baking sheet lined with parchment paper. Repeat with the remaining tortillas.

          Brush with Oil: Lightly spray or brush the taquitos with olive oil or melted coconut oil. This will help them crisp up nicely in the oven.

            Bake: Bake the taquitos in the preheated oven for 20-25 minutes or until they are golden brown and crispy. If desired, flip them halfway through for even crispiness.
